Ingredients:

  • 2 salmon fillets (around 6 oz each)
  • 1 tablespoon olive oil
  • 1 lemon, sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes
  • 1/2 red onion, sliced

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pat the salmon fillets dry with paper towels. Season both sides generously with salt and pepper.
  3. In a small bowl, whisk together olive oil, lemon juice from half the lemon, garlic, and oregano.
  4. Place the salmon fillets on the prepared baking sheet. Arrange the broccoli florets, cherry tomatoes, and red onion slices around the salmon.
  5. Drizzle the salmon and vegetables with the prepared lemon-garlic sauce. Top each salmon fillet with lemon slices.
  6. Bake for 15–20 minutes, or until the salmon is cooked through and flaky with a fork and the vegetables are tender-crisp.

Cooking Tips:

  • For extra crispy salmon skin, broil the fish for the last minute or two of cooking. Keep a close eye on it to prevent burning.
  • Don’t overcrowd the baking sheet. If your baking sheet isn’t large enough to fit all the ingredients in a single layer, use two baking sheets or cook the vegetables in a separate dish.
  • Not a fan of broccoli? Feel free to substitute other vegetables like asparagus, green beans, or Brussels sprouts.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
